Peanut Ginger Chicken Pasta



8 oz. noodles
1/2 Rotisserie chicken
1 red pepper, thinly sliced
1/2 english cucumber, thinly sliced
peanuts, crushed
2 scallions (optional)

Sauce
1/2 cup peanut butter
3 Tab. soy sauce
3 Tab. rice vinegar
1 Tab. brown sugar
1 cup water
1 teas. minced ginger



1. Cook and drain noodles.
2. Mix sauce ingredients in a blender. Pour over noodles. Stir.
3. Add chicken, red pepper and english cucumber. Stir.
4. Sprinkle with crushed peanuts and scallions, if desired. Serve hot or cold.

Rainbow Pasta Salad





spiral tri-colored noodles
cheddar cheese, cubed
salami, cut in quarters
olives, sliced
celery, sliced
Italian dressing

1. Cook and drain noodles. Cool completely.
2. Combine all other ingredients with noodles. Serve cold.

You can add any kind of veggie to this salad, but I like to keep mine simple so kids will eat it!

Another Chicken & Rice Casserole

1 can cream of chicken soup
1 tablespoon Worcestershire sauce
1/2 cup mayo
1 tablespoon minced onion
3 diced hard boiled eggs
1 1/2 cups celery, chopped
2 cups cooked rice
1 small can water chestnuts, chopped
2 cups diced cooked chicken, about 2 breasts
1 cup or so of grated cheddar cheese
couple hand fulls of potato chips or BBQ chips

Mix together all ingredients except the cheese & chips. Spoon & spread evenly into a 8x10 baking dish. Top with grated cheese & chips. If you use regular potato chips, sprinkle the top with paprika.

Bake for 45 minutes at 350 degrees. Enjoy!

Veggie Stir- Fry

 
1 ½ cups carrots, thinly sliced
1 ½ cups broccoli florets
¾ cup zuchinni, chopped
¾ cup sweet peppers
¾ cup orange juice
3 Tbsp. brown sugar
3 tsp. minced garlic
¼ cup soy sauce
2 tsp ginger
2 tsp vegetable or olive oil

In a large freezer bag add all on the veggies.  Gently force out any air; seal the bag.  In a quart size freezer bag add the oj, honey and ginger.  Place the 2 bags into another large freezer bag with printed recipe and seal, squeezing out as much air as possible. 

To cook; thaw.

Heat oil in a large skillet over medium-high heat.  Stir fry veggies until tender and crisp.  Add the orange juice mixture. Salt and pepper to taste.  Bring mixture to a boil for 1 minute, remove from heat and serve.

Cheesy Rigatoni Bake

1 16 oz. pkg. rigatoni noodles
2 Tbsp. butter
1/4 cup flour
1/2 tsp. salt
2 cups milk
1/4 cup water
4 eggs, beaten
2 (8oz.) cans tomato sauce
2 cups shredded mozzarella cheese
1/4 cup parmesan cheese

Cook pasta according the package directions.  In a saucepan, melt butter.  Stir in flour and salt until smooth, gradually add milk and water.  Bring to a boil, cook and stir for 2 minutes or until thickened.

Drain pasta and place in a large bowl.  Add beaten eggs.  Spoon into a greased 9 x 13 pan.  Top with tomato sauce and mozzarella cheese.  Spoon white sauce over top and sprinkle with parmesan cheese.  Bake at 375 degrees for 30-25 minutes.

Serve with a salad and garlic bread.

Freezing directions:  Slightly undercook pasta.  Place in a greased disposable aluminum pan.  Cover with plastic wrap and then with foil.

Potato and Hamburger Casserole

6 or more potatoes partially cooked and sliced
1 can cream of mushroom soup
1 can milk
1 pound hamburger, seasoned with salt and pepper
minced onion

1. Fry hamburger and onions until brown. Pour off grease.
2. Mix soup and milk, then add to hamburger. Mix well.
3. In a casserole dish, layer potatoes, meat/sauce, potatoes, meat/sauce.
4. Bake at 350 for 30-40 minutes, or until potatoes are tender.

Roxie's Delicious Chicken Breasts

6 chicken breasts, boneless, skinless
8 oz cream cheese
1 lb mushrooms
2 (10oz) condensed cream of chicken soup
1 pkg Italian dry salad dressing mix

Mix all ingredients together and pour over chicken breasts. Toss and stir until breasts are well coated and all ingredients are mixed together well. Place in a slow cooker on low and hear for 6-8 hours. Serve with rice, potatoes or steamed broccoli and other veggies.
