Breakfast Burritos



12 eggs
1 pound of meat (sausage, bacon, or ham)
2 cups shredded cheddar cheese
12 flour tortillas- 8"

Scramble eggs in skillet until done. Remove from heat. Cook meat and stir in with eggs.

Warm tortillas in microwave for 30 seconds. Place 1/2 cup of egg/meat mixture into tortilla, sprinkle with cheese, roll up like a burrito.

Wrap in plastic wrap. Label with heating instructions. Freeze burritos in a single layer on cookie sheet for about 1 hour, then place in ziploc and freeze.

Heating instructions:
Remove from plastic wrap and wrap in a paper towel. Microwave on high for about 2 minutes or until hot.

Fruit & Yogurt Parfait







1 cup frozen mixed fruit
1 cup vanilla yogurt
1/4 cup granola

1. In a cup, layer 1/2 cup yogurt, 1/2 cup fruit. Repeat.
2. Top with granola. Enjoy!

Beef Stroganoff-ish

1 lb hamburger
1 pkg mushrooms
1 packet lipton onion soup mix
1 can cream of mushroom soup
1-2 cups beef broth
salt & pepper to taste
egg noodles

Brown hamburger & drain grease. Saute mushrooms. Combine other with soup mix, mushroom soup & beef broth. Bring ingredients to a boil then let simmer for a little while.

Cook egg noodles. Drain and combine w/ hamburger & mushroom mixture.

I make this off the top of my head so the measurements vary. I serve with a big side of steamed veggies.

BBQ Chicken


Ingredients for Sauce

  • 1 1/2 cups vegetable oil
  • 3/4 cup soy sauce
  • 1/2 cup Worcestershire sauce
  • 1/2 cup red wine vinegar
  • 1/3 cup lemon juice
  • 2 tablespoons dry mustard
  • 1 teaspoon salt
  • 1 tablespoon black pepper
  • 1 1/2 teaspoons finely minced fresh parsley

Directions

  1. In a medium bowl, mix together oil, soy sauce, Worcestershire sauce, wine vinegar, and lemon juice. Stir in mustard powder, salt, pepper, and parsley. Use to marinate chicken before cooking as desired. The longer you marinate, the more flavor it will have.
  2. Preheat an outdoor grill for medium high heat and lightly oil grate.
  3. Grill chicken over medium high heat for 8 to 12 minutes per side, basting occasionally with the sauce, if any, until internal temperature reaches 180 degrees F (80 degrees C).

French Bread Pizza


1 1/2 lb. ground beef (I used some ground beef, some pepperoni slices and triangled pieces of canadian bacon)
1/2 tsp garlic powder (use only if using all 1 1/2 lb. of ground beef)
1/2 tsp salt (use only if using all 1 1/2 lb. of ground beef)
2 loaves (8 oz each) French bread, halved lengthwise
1 jar (8 oz) process cheese sauce
1 can (4 oz) mushroom stems and pieces, drained (opt)
1 can chopped olives (opt)
1 c. chopped green onions (I sauteed sliced green bell peppers and yellow onion)
1 1/2 c. pizza sauce
1/2 c. grated Parmesan cheese
4 c. (16 oz) shredded part-skim mozzarella cheese

1. In a skillet cook ground beef until no longer pink; drain. Stir in garlic powder and salt.

2. Place each bread half on a large piece of heavy duty foil. Spread with cheese sauce. Top with beef mixture, mushrooms, olives and onions. Drizzle with pizza sauce. Top with Parmesan and mozzarella cheeses. Wrap and freeze. May be frozen for up to 3 months.

3. To bake: Unwrap loaves and thaw on baking sheets in the refrigerator. Bake at 350 for 18 minutes or until cheese is melted.

Mexican Turkey Burgers

1.5 lbs ground turkey
1 egg
1 egg yolk
1/2 cup panko bread crumbs
2 Tbsp chopped fresh cilantro
1 lime, zested

Combine ingredients, form into patties. Bake 8 min at 450. Place on rolls, top with cheese and tomato if desired.

Chicken Mushroom Bake

1.5 lbs chicken tenders
1 envelope Lipton Garlic Mushroom Soup mix
1 can (14 oz) diced tomatoes
1 Tbsp olive or vegetable oil
1/2 cup shredded cheese (Monterey Jack or Mozzarella)
fresh mushrooms

1) Place all ingredients except cheese in baking pan
2) Bake at 375 for 25 min
3) Add cheese, bake 2 min
